Instructions
  1. In a large saucepan, melt the butter over medium-high heat and cook until it turns amber and develops brown butter aromas.

  2. Add the caster sugar, brown sugar and cream, then bring the mixture to a gentle boil.

  3. Boil for about 5 minutes, stirring constantly. Test by dropping a little into iced water — when it forms a soft but firm ball, it’s ready.

  4. Remove from the heat, stir in vanilla and icing sugar, then beat with a handheld mixer until the mixture starts to come together into crumbs.

Instructions
