Tips and tricks

  • Rinse canned chickpeas thoroughly to control salt and remove the packing liquid. Use a mesh strainer and run water over them for a minute or two.
  • Tahini contributes the classic sesame flavor and creamy mouthfeel. If you need to omit tahini because of an allergy, add more lemon, garlic, or a touch of olive oil to round out the taste.
  • Adjust the water or oil one teaspoon at a time to reach the texture you want. High-speed blenders can make hummus very smooth; pulsed blending works well if you prefer a bit more texture.
  • Serve hummus with fresh vegetables, pita or crackers, spread on sandwiches, or as a sauce for bowls and grain salads. Finish with a drizzle of olive oil and a sprinkle of spices or seeds for extra flavor.
