  • G Hughes Sugar Free BBQ sauce – Traditional BBQ sauces can be high in sugar. A sugar-free option keeps the smoky, tangy BBQ flavor without added sugars. Use your favorite sugar-free or low-sugar sauce if preferred.
  • Shredded cheese – Pick a cheese that melts well. Cheddar, Colby Jack, Pepper Jack, or provolone are all great choices depending on how much tang or heat you want.
  • Guacamole – A small spoonful of guacamole or mashed avocado adds creaminess and healthy fats. Homemade or store-bought both work; add it right after serving so it stays fresh and bright.

This recipe is quick and simple — perfect for a fast snack, appetizer, or light party bite. Five clear steps are all you need.

  1. Cook the chicken until it’s no longer pink and fully cooked through. Let it rest briefly, then chop or shred it into small pieces.
  2. Toss the warm chicken with the BBQ sauce until evenly coated.
  3. Slice the mini bell peppers in half lengthwise and remove seeds and membranes to create little boats.
  4. Fill each pepper half with a spoonful of the BBQ chicken mixture, pressing gently to pack it in.
  5. Sprinkle shredded cheese over each filled pepper and place under a hot broiler just until the cheese melts and bubbles. Remove and top with a small dollop of guacamole before serving.

  • 1 tablespoon Shredded Cheddar Cheese
