- Cook the chicken until it’s no longer pink and fully cooked through. Let it rest briefly, then chop or shred it into small pieces.
- Toss the warm chicken with the BBQ sauce until evenly coated.
- Slice the mini bell peppers in half lengthwise and remove seeds and membranes to create little boats.
